Beauty Influencer Ava Lee Teams With Cocokind Founder to Launch Konjac Jelly Snack Brand
Ava Lee, the creator behind “Glow With Ava,” and Cocokind founder Priscilla Tsai are launching Mimitime, a line of collagen-infused konjac jelly snacks, with an exclusive nationwide Target launch set for August 16, per WWD.
Made from the konjac plant, the snack is a low-calorie, fiber-based jelly with a soft, gel-like texture, and will launch in four flavors: strawberry, peach, grape and apple. Each pouch contains 30 calories, 3 grams of sugar and 1,500 milligrams of marine collagen, which the founders selected for its bioavailability. Individual pouches will retail for $2.99 at Target, while 10-packs will sell for $28 on Mimitime’s own site.
Lee and Tsai met nearly eight years ago while building their respective brands, after both had previously worked in finance. A shared interest in Korean and Asian snacks led them to konjac jelly, and they began developing Mimitime two years ago alongside chief executive officer Cindy Lloyd, working with Korean suppliers to refine the product’s texture and flavors. The formulation uses organic brown sugar rather than the sugar alcohols found in many existing konjac products, a choice the founders said makes the taste more approachable for American consumers while keeping sugar content low.
“Most Americans don’t know what konjac jelly or Korean jelly snacks are, so we felt like it was such perfect timing,” said Tsai, Mimitime’s co-founder and President.
At Target, Mimitime will sit within the beauty ingestibles category alongside brands including Lemme. Tsai said the retailer has already committed to more than doubling Mimitime’s shelf footprint starting in January 2027. Amanda Nusz, Target’s SVP of Merchandising for Essentials and Beauty, said the retailer’s guests are “increasingly looking for innovative beauty products that become part of their everyday wellness routines.”
Mimitime expects to generate more than $1 million in sales during its first four-and-a-half months on the market, according to WWD. Lee said the founders see konjac jelly as an entry point into a broader functional-snacking business: “We’re doing konjac jelly and collagen, but I feel like this is just the beginning.”
